Mediterranean Hummus Toast with Roasted Red Peppers

A flavor-filled toast perfect for breakfast, lunch, or a snack in between. Fresh veggies and feta cheese are stacked on top of a bed of creamy hummus. Drizzled with olive oil and fresh basil.

Ingredients:

  • 4 pieces of toast, bread of your choice

  • yellow lentil hummus (or hummus of your choice)

  • 1 large red bell pepper, sliced lengthwise

  • 1/4 cup pitted kalamata olives

  • 1 tbsp olive oil

  • 1 medium sized tomato, sliced

  • 2 tbsp fresh lemon juice

  • thinly sliced red onion, for topping

  • feta cheese crumbles, for topping

  • olive oil, for topping

  • fresh basil, for topping


Directions:

  1. Start by taking a red bell pepper and slicing it in lengthwise strips. Coat a pan with olive oil and place the bell peppers and kalamata olives in on high heat. Let cook on one side, and flip to the other, allowing the skin to get slightly charred. About 3 minutes. Remove from heat and set aside.

  2. Take your sliced tomato and place in a pan with a pinch of salt and fresh lemon juice. Cook until the lemon juice and soaked into the tomato completely. Remove from heat.

  3. To assemble, take your slices of toast and smear generous amounts of yellow lentil hummus on one side. Divide sliced tomato between each piece. Stack bell peppers and olives on top of that. Add in small amounts of thinly sliced red onion and generous amounts of feta cheese. Drizzle olive oil on top and garnish with fresh basil. Enjoy!
