Old Fashioned Pancakes with Lemon Mascarpone Cream, Blackberry Sauce and Fresh Peaches

These pancakes are the perfect combination of a comfortable classic, topped with fresh summer ingredients. A simple breakfast staple topped with lemon mascarpone cream, juicy cinnamon blackberries and fresh peaches. Rich and not too sweet, these can be eaten for breakfast or dinner.

Ingredients:

Pancakes

  • 3 cups flour

  • 7 teaspoons baking powder

  • 1/2 teaspoon salt

  • 2 1/2 cups of milk

  • 2 eggs

  • 6 tablespoons melted butter

Blackberry Sauce

  • 24 oz of fresh blackberries (you can use less berries, but I like to make a little extra and mix it with greek yogurt or top vanilla ice cream with it)

  • 1/2 tsp of cinnamon

  • 1 tbsp sugar

  • 1 tbsp honey

  • Juice of 1 lemon

Lemon Mascarpone Cream

  • 1 8oz pkg mascarpone cream

  • 3 tablespoons heavy whipping cream

  • 1 tbsp honey

  • Zest of 1 lemon

  • Fresh peaches

  • Maple syrup, agave, honey for topping (optional, if you would like more sweetness)


Directions:

  1. Mix flour, baking powder, and salt in a stand mixer or by hand. Make a well in the center and add the milk, eggs, and melted butter. Mix until combined, but leave some lumps.

  2. Heat a griddle or pan to medium heat and grease it with butter or cooking spray. Cook until golden brown on both sides.

  3. Fill the saucepan with blackberries, and pour in the fresh lemon juice. Sprinkle with sugar and honey. Cook over high heat until the berries start to juice and it boils gently. Turn down, until it is just simmering. Stir in the cinnamon. Cook until the berries are mostly broken down but there are still some intact. Let sit while making the cream.

4. Empty the package of mascarpone cheese into a stand mixer or bowl. Pour the heavy whipping cream and lemon zest in. Gradually add the honey in. Beat with a whisk for about 1 minute until light and fluffy.

5. Spoon the finished cream between the pancakes, layer fresh peaches between. Dollop a generous amount of cream on the top and place more fresh peaches. Spoon the blackberry sauce on top of the stack. If wanted, you can top with maple syrup, agave, or honey. I liked the pancakes just by themselves the very best. Enjoy!
