Nectarine and Feta Cheese Avocado Toast

This is the easiest meal for breakfast or lunch or a snack in between. Whole wheat toast with fresh nectarines, crumbled feta and drizzled olive oil all over some mashed avocado.

servings: 2 slices of toast


Ingredients:

  • 2 slices of toasted whole wheat bread

  • 1 medium to large avocado

  • 1 nectarine

  • 2 tbsp crumbled feta cheese

  • 2 tbsp olive oil

  • Salt and pepper to taste


Directions:

  1. Scoop out avocado and mash with a fork in bowl. Add salt to taste. Apply thick layer to toast.

  2. Slice nectarine, and layer on top of avocado. Crumble feta cheese on top.

  3. Drizzle olive oil on top of toast. I usually just use the cap for the bottle of oil as my measurement. Grind fresh pepper as the final layer.

  4. Eat and roll your eyes at everyone who makes fun of you for eating avocado toast, because it’s really good.
